Healthy & Fresh Shrimp Recipes

If you love shrimp, here are two fresh and healthy recipes you can make at home any day of the week. A simple Marinade for shrimp tacos and a beautiful Shrimp Ceviche everyone will love!

It's May in the Northwest which means it's spotted prawn fishing season! We are so lucky to live in a place that provides fresh, healthy and delicious seafood. Instead of freezing the loot this year, we decided to eat them as fresh as possible.
I knew one of the meals was going to be shrimp tacos. In the past we have used a store bought marinade but this time I wanted to try something from scratch. I collected a few spices from the pantry, squeezed some fresh lime juice and had some of the best tacos ever! I think you could use this marinade on chicken, steak, fish, etc. as well.
Shrimp Marinade Ingredients
2 tablespoons olive oil
2 tablespoons lime juice
½ teaspoon cumin powder
½ teaspoon ancho chile powder
salt and pepper to taste
1. Add all ingredients to a mason jar, screw on lid and shake until combined (you can also stir vigorously in a bowl if you don't have a jar handy).
2. Place shrimp in a large bowl (I used about 20 fresh shrimp, peeled and deveined). Add marinade and allow to sit for 15-20 minutes.
3. Add a little more olive oil to a pan on the stove on med-high heat and then place shrimp in pan. Pan fry for 2-3 minutes until shrimp are cooked through (not too long or they will get rubbery).
4. Add to a taco shell, top with your favorite toppings and enjoy!
Ok, now the ceviche recipe. I got this from one of my besties, who completely changed her eating habits and is a true inspiration for small changes that make a big difference. Check out her site HERE. This recipe is healthy but does not sacrifice ANY flavor. My kitchen smelled so amazing while I was making this due to all the fresh veggies and herbs.
Traditional ceviche is a dish of raw seafood tossed in an acidic marinade like citrus juice or vinegar which “cooks” the fish. Please ensure all seafood is fully "cooked" and not raw before you eat it. If you don't want to use raw seafood, you can also used cooked seafood that has been refrigerated so it's nice and cold.
Ceviche Ingredients
1 lb shrimp, (raw or cooked)
4 tomatoes, diced
2 jalapeños, diced
2 yellow peppers, diced
2 lemons, juiced
2 limes, juiced
handful of cilantro, chopped
handful of green onions, chopped
salt/pepper to taste
2-3 cloves garlic, minced (optional)
1. Chop everything, add to large mixing bowl, mix thoroughly and allow to marinate in the fridge for 30-60 minutes before serving. If you are using raw seafood, marinate in the fridge overnight or until seafood is fully "cooked" through and not raw when you cut into it. The type of seafood and size will change the "cook" time.
2. Serve with your favorite tortillas chips and enjoy!
The colors and flavors are perfect for shrimp. I took this to a BBQ for Memorial day and it disappeared!
Tips and Tricks
-You can also add white fish or crab for even more seafood goodness (cooked or raw). I would do all raw or all cooked when preparing.
-Next time I will dice my veggies a little smaller to make the chip dipping easier.
-I took out almost all of the seeds from the jalapeños and I should have left some. I'm kind of a wimp when it comes to spice, but it need a little more kick.
-I'm also adding chopped avocado next time for a creamy texture!
-Always be careful when using raw ingredients and make sure it is fully cooked before eating.
