Easy Coconut Fig Crumble Bars

This recipe for Coconut Fig Squares is another easy and delicious one! You are going to make these all the time and they are perfect for dessert, breakfast or a snack! These bars have homemade fig jam (or you can buy some), coconut flakes and a crumbly oatmeal topping that melts in your mouth.
I sometimes come up with recipes when I have an abundance of something...enter: FIGS! I look for inspiration and ideas on the web (does anyone say that anymore?!?) and then go for it!
Since we had a bowl full of figs from our tree this year, my first thought was to make fig jam. Fig jam is awesome with cheese (which I eat too much of), on bread, in these bars, did I mention cheese?? 😆 Click HERE for the recipe to make Quick Homemade Fig Jam. It's easy (of course) and is ready in just over an hour. There are other recipes out there to make fig jam that lasts longer by canning it. I knew I was going to eat mine right away so I just made a version you could keep in the refrigerator for about 2 weeks.
Now I have all of this fig jam and as much as I like cheese and bread, I needed something else to do with it. So that’s how I got to Coconut Fig Crumble Bars! How perfect that there is an easy recipe to use two of my favorite things: coconut and fig jam! Not a combination you hear often, but yummy all the same.
My hope is to inspire other to "go for it" also! The kitchen is not scary and it's so worth it to make things from scratch. Like I always say, it's impressive to family and friends and best of all, it's delicious! On to the recipe...
Ingredients
1 cup fig jam (recipe HERE or at bottom of post)
1 ½ cups flour
1 ½ cups rolled oats
½ cup sweetened coconut flakes
½ cup brown sugar
1 teaspoon baking powder
2 pinches of salt
¾ cup coconut oil or melted butter
Directions
1. Make fig jam. Recipe HERE or at bottom of post. This takes about an hour so plan ahead or make ahead of time.
2. Preheat oven to 350 degrees and prepare pan with parchment paper and non-stick spray. My pan is 8x10.
3. Add all ingredients except the fig jam into a bowl and combine into a crumble.

4. Take a little more than half of the crumble mixture and press into the bottom of your pan.
5. Bake in oven for 10-12 minutes.
6. Remove pan from oven and spread fig jam all over the top.

7. Take the remaining crumble and put on top of fig jam. Gently press down the top (be careful if the hot pan!) to get it even and lightly packed.
8. Place back into the oven for 23 minutes. If you want a crispy and brown top, turn on broiler for the last 1-2 minutes.
9. Remove from oven and allow to cool.

10. Enjoy!
These bars are amazing warm but are are very soft. Once they have been in the refrigerator the get much firmer. These are AMAZING with ice cream, coffee, whipped cream or just all by themselves. These bars were inspired by The Endless Meal.

How to make Fig Jam:
Ingredients
¾ cup water
¾ cup sugar
Juice of 1 small lemon, about ½ cup
2 cups fresh figs, cut in half
Directions
1. Place water and sugar in a pan and cook on medium heat until sugar is dissolved.
2. Add figs and lemon juice and bring to a boil.
3. Turn down heat and simmer for about an hour with a lid mostly on. Take the time to stir and mash the mixture every once in a while. The figs will start to break down and the peels will essentially disappear!
4. After an hour, remove from heat and allow to cool. Mash up any remaining chunks of fig.
5. Place in a sealable glass jar and place into fridge for up to 2 weeks.
