Easy Cake Bites

If you need an easy and delicious dessert for any occasion, these Cake Bites will be your new go-to recipe! They are so good and everyone will love them. The flavor possibilities are endless, which makes this easy recipe work for any celebration.
I first started making Cake Bites over 10 years ago right when Cake Pops became a thing. Honestly I thought Cake Pops were kind of boring, I mean who wants just one little bite of cake?? However, I did want to find out how to make them and back when Pinterest was a baby, I found this recipe instead. It's so easy to remember you only have to make it once to know how to put these together. Anytime I make these, they dissapear. Seriously. I still get requests to bring these whenever I get an invitation. They are that good. They are almost like a truffle because they are so dense and moist and with the sprinkles, they remind me a little of a frosted animal cookie. You know the ones.
So, here are the steps, it's not even really a recipe. At the bottom of the page I give ideas for varieties I've tried or will most likely try in the future. So fun!
Ingredients:
1 boxed cake mix, any flavor you desire (I used white cake mix)
1 can of frosting, any flavor you desire (I used cream cheese flavor)
1 package of white chocolate chips or melting chips or bark (they are the same thing)
sprinkles
Directions:
1. Make a boxed cake as directed on the box. I usually just make a 9 x 13 size.
2. Let the cake cool completely, you can do this in the fridge if you want.
3. Once the cake is cooled, cut into small pieces and place in a food processor or blender and pulse into crumbles. You can also just break up in a bowl by hand with a spoon, this is what I usually do. Place crumbles in a large bowl.
4. Take a container of frosting and mix into the crumble mixture. This takes a little elbow grease to get it all mixed in. The mixture will be between a batter and a dough.
5. Prepare cookie sheet by covering with wax paper.
6. In this step you will be using your hands so make sure they are clean. In order to keep batter from sticking too much and to roll balls easier, I spray my hands with a little cooking spray. Scoop out about 1 tablespoon of batter and roll into a ball between your hands. Place on wax paper. Continue to make balls with the rest of the dough.

7. Melt chips/bark in a microwave safe bowl for 45 seconds. Stir and continue to melt at 20 second intervals until fully melted. You can also use a double boiler on the stove, make sure no water or condensation gets in or it will seize!! This happened to me once and it was terrible! Nothing make you feel like a failure in the kitchen more than seized chocolate 😢.
8. Dip each ball into the melted coating and make sure the ball is completely covered. I use an iced tea spoon that has a long handle to do this. Tap off excess coating and place on wax paper. Sprinkle with sprinkles so they stick before bark sets, you can do about 5-6 at a time and then sprinkle.

9. Allow balls to set completely, at least an hour. You can speed it up in the fridge, or if it's really warm you should just put them in there. I've also freezed these ahead of time and they still taste great!
These will last a few days in the fridge in an airtight container.
I've done different variations of these using spiced cake mix, vanilla, yellow, gingerbread, chocolate, etc. You can also use your choice of frosting or add a little extra flavor to the cake mix or frosting. I have also made these using homemade cake and frosting. Truthfully, I like the store bought version better.
